After The Decaf Project with James Hoffmann (unforgettable, crazy, and seriously exhausting), we simply couldn't say no: The Fermentation Project is James Hoffmann's new global tasting event – this time together with Lucia Solis. One more reason: we're huge fans of her work.
What is The Fermentation Project?
One coffee from Guatemala, four different fermentation approaches:
- Mechanically demucilaged (washed),
- Wild fermentation (washed),
- Lactobacillus inoculated (washed),
- Yeast inoculated (washed)
Four cups, one origin, one direct comparison. That's how you get to understand the influence of fermentation a little better – while being part of one of the biggest tasting events in the coffee world.
Who's behind it?
- Lucia Solis studied viticulture and enology at UC Davis, spent nine years making wine in Napa Valley, and has worked with coffee producers in over 15 countries on fermentation and processing since 2014. Her podcast Making Coffee is required listening.
- James Hoffmann – YouTube coffee legend, 2007 World Barista Champion, author, educator – who doesn't know him?!
- Caravela acts as origin and logistics partner, moving the coffees from Guatemala to roasteries worldwide – transparent and traceable.
Who is D stands for?
We're Austria's #1 decaf specialist and stand for a new generation of decaf: quality, transparency and simply INCREDIBLY GOOD.
So why are we joining in?
Because fermentation is such a fascinating topic. What happens in the fermentation tank decides what you taste – in decaf just as much as in "regular" coffee. We love experiments like this.
