Our first Low Caf (or rather: Almost Decaf) from the renowned Los Nogales farm.

Why “almost”? – The On-Farm Decaffeination Process, pioneered by Angie Hernández, uses a natural solvent made from coffee pulp and husk to gently remove caffeine. With just 0.13% caffeine, it’s slightly above the EU limit of 0.1% and therefore can’t officially be labeled as decaf here.

This also sparked debate in 2024 when the coffee won the US Brewers Cup. Since decaf classification works differently in the US, it was labeled as decaf — leading to some confusion.

The lot comes from the high-altitude Pulpito plot, where Typica grows alongside Yellow Bourbon and Geisha. The cooler climate supports consistently high-quality cherry production, making it one of the most exceptional areas on the farm. The beans undergo 24 hours of anaerobic fermentation, are washed, and then decaffeinated directly on the farm.

In the cup: a juicy texture, bright acidity, and a refreshing profile with notes of tangerine, raspberry, and plum-winey notes.

About the process Plus

What makes this almost decaf truly unique is that the entire decaffeination process happens on the farm itself and is part of the coffee processing:

Selective & Floating
Ripe coffee cherries are carefully selected and picked, then submerged in water to separate out the defective or unripe ones.

Fermentation & Washing
The cherries are fermented for 24 hours and then thoroughly washed.

Drying & Hulling
The beans are sun-dried on traditional raised beds, then hulled to remove the parchment layer, using only the resulting *excelso* coffee.

Hot Water immersion
The *excelso* beans are immersed in hot water at 40°C for 4 hours. This step is repeated in two consecutive cycles.

Addition of natural solvent
A natural solvent (must), derived from the coffee pulp or husk, is added and the beans are left to soak for 24 hours to remove the caffeine. 

Coffee Washing 
After immersion, the beans are carefully washed to remove any remaining residues.

Drying
The washed coffee is placed in the drying area for approximately 5 days.

How to brew Plus
Filter

Ratio: 1:15 (e.g. 15g coffee to 225ml water)

Temperature: lower, approx. 88-89°C

Grinding level: slightly coarser than usual

Simple Recipe:
Bloom: 45g - 45sec
2 pours on 120g and 225g
Too much agitation leads to stalling and increased astringency.

Espresso

Temperature: Lower, about 91°C

Ratio: 1:2 as a base or shorter – I wouldn’t recommend longer.

Grinding level: Slightly finer than usual.

Aeropress

Here I can recommend Lance Hendricks’ recipe:

  • 30g coffee with 120g water (80-85°C)

  • Grinding level: Coarser than usual (French Press)

Preparation:


  1. Pour all the water in at once.

  2. Stir for 10 seconds.

  3. After 1 minute, put the lid on and press for 1 minute.

  4. Dilute with 80-120g water.

Should I order ground or whole beans? Plus

We recommend ordering whole beans and grinding them fresh before each preparation. This guarantees the best results, especially with decaf, as this loses its flavor more quickly than regular coffee due to the decaffeination process. A hand or automatic grinder is a worthwhile addition to any coffee-loving household. However, we are happy to grind the coffee for you if you wish.

How fresh is the coffee? Plus

Our decaf is freshly roasted every week and shipped directly after roasting, the coffee should rest for 5-7 days to develop its full aroma.

How much caffeine does decaf have? Plus

Although many people say “caffeine-free coffee,” that is not entirely accurate. Decaffeinated green coffee and roasted coffee has a caffeine content of less than 1 gram per kilogram – or 0.1%.

For comparison:

  • Decaffeinated beans: 0.1% caffeine
  • Arabica: approx. 1-1.4% caffeine
  • Robusta or Canephoras: 1.8-3.5% caffeine
  • Aramosa, Laurina (Low Caf beans): 0.4-0.8% caffeine
