Our beloved Nutty Nib just got an upgrade — now bio certified, and so are we as a roastery.

Produced at Fazendas Dutra, a family-owned estate in Minas Gerais, Brazil, this coffee reflects the Dutra family’s deep commitment to regenerative organic farming. The farm holds ROC certification, powered by solar energy and guided by fair labor and environmental responsibility.

Each harvest is hand-tended, naturally processed, and dried using renewable energy. The coffee was naturally decaffeinated in Germany by Coffein Compagnie using a gentle water process.

In the cup, it delivers everything we love about classic Brazilian coffee — full-bodied, low in acidity, and richly sweet, with notes of chocolate and nut that shine in both espresso and cappuccino.

Fazendas Dutra – Regenerative Organic Coffee

Fazendas Dutra is a family-run coffee estate located in the scenic region of Matas de Minas, Brazil. The farm’s story began in the 1950s when José “Zeca” Dutra Sobrinho planted his first hectare of coffee.

After José Dutra’s passing in 1999, his wife Osvaldina and their children continued his mission. The Dutra brothers grew up on the farm, studied agronomy and business, and invested in innovation to carry the farm into the future. Today, they produce specialty and organic coffees that are known for their quality, consistency, and environmental integrity.

A Regenerative and Organic Approach

Fazendas Dutra follows Regenerative Organic Coffee (ROC) standards – one of the world’s most rigorous sustainability certifications. ROC goes beyond traditional organic certification by focusing on soil health, animal welfare, social fairness, and ecological balance.

The farm’s regenerative methods include:

  • Agroforestry systems that combine coffee plants with over 5,000 avocado trees, African mahogany, eucalyptus, and native fruit trees. These provide shade, enhance soil fertility, and create a rich habitat for birds, insects, and other wildlife.
  • Natural composting and reduced tillage, which protect soil structure and increase carbon retention.
  • Rainwater-only irrigation and careful water management to preserve local resources.
  • Ground cover and mulching from pruned vegetation to prevent erosion and maintain soil moisture.

This balanced ecosystem not only improves coffee quality but also strengthens resilience against climate change.

Carbon-Negative Energy

Sustainability at Fazendas Dutra extends far beyond the fields. The estate operates its own photovoltaic solar plant, generating around 1.38 million kWh per year – enough to power more than 460 households.

This clean energy prevents roughly 960 tons of CO₂ emissions annually and saves the equivalent of 10 billion liters of water that would otherwise be used by hydroelectric plants.

Social Fairness

Fazendas Dutra ensures fair wages, safe working conditions, and access to healthcare and education for their workers, and supporting the local communities through initiatives like scholarships, infrastructure development, and community health programs.

Award-Winning Sustainability

In 2024, Globo Rural, Brazil’s leading agricultural media outlet, recognized Fazendas Dutra as the second most sustainable farm in the country in its Fazenda Sustentável awards.

About the process Plus

Natural Process

This coffee is sun-dried, a process that enhances its sweet and fruity notes. The Brazilian harvest yields a blend of ripe and semi-ripe cherries, contributing nutty and chocolatey aromas to the final product. The beans are sun-dried on large patios, which speeds up the drying process while preserving the coffee's bright acidity.

Water Decaf Process

This coffee was produced in Bremen at Caffeine Company Decaffeinated using the Hanseatic Water Process. A gentle water process for the natural decaffeination of green coffee.

The Hanseatic Water Process uses pure water to extract the caffeine from the green beans:

  1. Preparation: First, the green coffee beans are treated with steam to prepare them for decaffeination.
  2. Caffeine attraction:
    This is the core phase in which pure water is used to remove the caffeine.
    - Extraction: Water is used to extract the water-soluble substances, including caffeine, from the green coffee beans.
    - Adsorption:The caffeine is bound and removed from the resulting suspension using activated carbon (adsorption step).
    - Intermediate drying:The coffee beans undergo an intermediate drying process.
    - Return:The decaffeinated suspension is concentrated by evaporation (decaffeinated coffee extract). This concentrated extract is then recombined with the decaffeinated beans (absorption).
  3. Post-treatment: The beans are then dried, polished, and subjected to analytical and organoleptic quality control.

The Hanseatic Water Process is, by the way,certified organic(EU and USDA),kosherandhalal.

How to brew Plus
Filter

Ratio: 1:15 (e.g. 15g coffee to 225ml water)

Temperature: lower, approx. 88-89°C

Grinding level: slightly coarser than usual

Simple Recipe:
Bloom: 45g - 45sec
2 pours on 120g and 225g
Too much agitation leads to stalling and increased astringency.

Espresso

Temperature: Lower, about 91°C

Ratio: 1:2 as a base or shorter – I wouldn’t recommend longer.

Grinding level: Slightly finer than usual.

Aeropress

Here I can recommend Lance Hendricks’ recipe:

  • 30g coffee with 120g water (80-85°C)

  • Grinding level: Coarser than usual (French Press)

Preparation:


  1. Pour all the water in at once.

  2. Stir for 10 seconds.

  3. After 1 minute, put the lid on and press for 1 minute.

  4. Dilute with 80-120g water.

Should I order ground or whole beans? Plus

We recommend ordering whole beans and grinding them fresh before each preparation. This guarantees the best results, especially with decaf, as this loses its flavor more quickly than regular coffee due to the decaffeination process. A hand or automatic grinder is a worthwhile addition to any coffee-loving household. However, we are happy to grind the coffee for you if you wish.

How fresh is the coffee? Plus

Our decaf is freshly roasted every week and shipped directly after roasting, the coffee should rest for 5-7 days to develop its full aroma.

How much caffeine does decaf have? Plus

Although many people say “caffeine-free coffee,” that is not entirely accurate. Decaffeinated green coffee and roasted coffee has a caffeine content of less than 1 gram per kilogram – or 0.1%.

For comparison:

  • Decaffeinated beans: 0.1% caffeine
  • Arabica: approx. 1-1.4% caffeine
  • Robusta or Canephoras: 1.8-3.5% caffeine
  • Aramosa, Laurina (Low Caf beans): 0.4-0.8% caffeine
